蛋製品工廠應符合食品安全管制系統準則之規定 中華民國 107年 5月 1日衛授食字第 1071300191號公告訂定 一、本規定依食品安全衛生管理法第八條第二項規定訂定之。 二、本規定用詞，定義如下： (一)蛋製品：指以蛋為主成分，製造成可供人食用之食品，包括： 1.液蛋：指液全蛋、液蛋黃、液蛋白。 2.乾燥蛋粉：指鮮蛋或液蛋經乾燥成粉末之產品。 3.醃製蛋品：指鮮蛋以強鹼、高濃度食鹽、食用酒及添加或不添加 其他原料或食品添加物等，經適當時間浸泡、包敷或調理所製成 之產品。 (二)蛋製品工廠：指從事蛋製品製造、加工、調配之工廠。 三、依工廠管理輔導法及其相關規定，須辦理工廠登記之蛋製品工廠，應 實施食品安全管制系統。 四、前點蛋製品工廠實施日期如下： (一)資本額新臺幣一億元以上者：自中華民國一百零七年七月一日實 施。 (二)資本額新臺幣三千萬元以上，未達一億元者：自中華民國一百零 八年七月一日實施。 (三)資本額未達新臺幣三千萬元，且食品從業人員五人以上者：自中 華民國一百零九年七月一日實施。
